It’s almost midnight and I’m still up. My plan was to make red beans and rice for dinner. The thing is, I’ve never made beans from dry before, only from cans. I didn’t actually realize exactly how long the damn things would need to cook.
So, we ended up having blue box mac and cheese for dinner and I spent the past 4 hours intermittently watching star trek and stirring a big pot of beans.
You know what?
So worth the wait.
Ever been to Popeye’s Chicken? I was completely hooked on their beans and rice when we lived in Florida. In Vermont? Popeye’s does not exist. Devastating. I’ve been trying to figure out how they get those beans to taste like that, the creamy texture, the rich, salty taste and the warm spicy feeling that lingers in your mouth after you’re done. Hunh… That description ended up sounding very porny… Anyway.
I got it. I just ate a plate full and I’m struggling not to go back into the kitchen and get another plate even though I’m comfortably full.
I’m going to slip into a blissful food coma now. I hope I’m not hungover tomorrow

    Nothing like homemade beans. I haven’t done red beans yet, we are big mexican food eaters and about 8 years ago a friend showed me how to make refried beans, since then I can’t stand canned. Really easy, does take some time, but so very worth it. I tend to make a big pot so we have them for a few different meals throughout the week.

      We got a whole mess of canned beans from WIC but they’re mostly chick peas and black beans. I really wanted to try making red beans and rice again so i figured I’d try the dry ones… Definitely gonna do that again!
